CARING FOR CHOCOLATE

Chocolates can be adversely affected if exposed to unfavourable conditions after manufacture which results in bloom. Bloom is a greyish coating on the surface of chocolates and is more visible on dark chocolate. We take every care in the handling of our products within our own distribution system, however once the product leaves our care we have little control over such things as the storage conditions for example, the temperature and humidity the chocolate is kept in..
Gray Bloom or White Streaks: If at any time the chocolate is heated beyond the tempering zones, it will burn or a gray "bloom" or white streaks will appear on the outside when cooled. Repeat tempering process.
Fat bloom happens if the chocolate has encountered temperature changes. Fat bloom is when the fat (cocoa butter) melts and separates itself from the cocoa solids. As the cocoa butter re-solidifies it works its way to the surface of the chocolate, leaving those gray streaks or white blotches. Fat bloom is often due to poor storage conditions.
Sugar bloom is characterized by a white, dusty, grainy coating that appears on the surface of chocolate. To understand why this occurs, you first need to recall two things: Chocolate consists of ground cocoa beans as well as sugar—and that means sugar crystals are distributed throughout the chocolate.
You should consume chocolate bars within two to four months after the ‘best before’ date. This can extend to six months if stored in the fridge, or up to eight months in the freezer. Boxed chocolates – After cracking open a box, chocolates should stay good for six to nine months.
The optimum temperature for chocolate to be stored at is between 14-16°C. Fridges are very high humidity environments, which is not suitable for chocolate due to the high moisture, which can result in sugar bloom. When you do, it is best to place the chocolate in an airtight container or double wrap in plastic and place in the bottom section of the fridge. Bring the chocolate to room temperature slowly before unpacking, several hours before consuming.
